Special Scrambled Eggs

Ingredients

  • Eggs (2-3)
  • Chopped vegetables (red pepper, onion, etc.)
  • Oil
  • Milk
  • Baked potato (pre-cooked)

Directions:

  1. Cut vegetables into bite size pieces
  2. Add oil and stir fry on medium heat until soft
  3. Chop baked potato and add to pan
  4. Scramble eggs with milk and add to pan
  5. Stir constantly until eggs are cooked

Tips:

  • Use baked potatoes from the night before to save on cooking time
