Shrimp Pad Thai

Ingredients

  • Rice Noodles
  • Carrots, Sweet Peppers, Lime, Garlic, Snap peas
  • Peanuts
  • Thai Sauce
  • Oil
  • Shrimp

Directions:

  1. Bring water to a boil in pot. Add noodles.
  2. In fry pan, sauté vegetables with oil. Add shrimp.
  3. Mix vegetables and shrimp with drained noodles. Add sauce.
  4. Garnish with crushed peanuts and sprinkle with lime juice

Tips:

  • Crush peanuts in a plastic bag with the bottom of a mug or pot
  • Substitute shrimp with chicken and/or tofu
  • Fresh sprouts are a great addition
