Learn to Camp Chicken

Sheha (Learn to Camp Graduate)

Serves 4-6

Ingredients:

6-8 chicken drumsticks
Tomato puree (1 Tbsp for each drumstick)
Salt, pepper, chili flakes, parsley (to taste)
1 tsp olive oil

Directions:

1. Sauté drumsticks in oil (or grill).
2. In sauce pan, add spice to tomato puree and heat.
3. Add sauce to drumsticks, stirring occasionally until finished cooking.

Stuffed Red Peppers

Logan & Amanada (Learn to Camp Graduates)

Serves 2

Ingredients:

1/2 cup quinoa
1 cup water
Olive oil
1/2 white onion, chopped
2 cloves garilic, chopped
1/2 cup marinara sauce
Spice to taste (basil, oregano, salt, pepper)
1 cup chicken or 1/2 block firm tofu
Grated cheese

Directions:

1. Bring water and quinoa to boil in small pot.
2. Heat oil in saucepan. Sauté onion, garlic and chicken/tofu with spices.
3. When quinoa is almost ready, roast cored red peppers in the saucepan.
4. Remove red peppers from heat; add quinoa and marinara sauce to pan.
5. Layer cheese and quinoa mixture in peppers.
