Stuffed Red Peppers

  • ½ c. quinoa
  • 1c. water
  • Olive oil
  • ½ white onion, chopped
  • 2 cloves garlic, chopped
  • ½ c. marinara sauce
  • Spices (e.g. basil, oregano, salt, pepper)
  • ½ block firm tofu
  • Cheese
  • 2 red peppers


  1. Bring water and quinoa to boil in small pot
  2. Heat oil in saucepan. Sauté onion, garlic and tofu with spices
  3. When quinoa is almost ready, roast cored red peppers in the saucepan
  4. Remove red peppers from heat; add quinoa and marinara sauce to pan.
  5. Layer cheese and quinoa mixture in peppers


  • Be creative with the ingredients used to stuff peppers
  • Portions included serve two people
