Shrimp Pad Thai

- Rice Noodles
- Carrots, Sweet Peppers, Lime, Garlic, Snap peas
- Thai Sauce
- Bring water to a boil in pot. Add noodles.
- In fry pan, sauté vegetables with oil. Add shrimp.
- Mix vegetables and shrimp with drained noodles. Add sauce.
- Garnish with crushed peanuts and sprinkle with lime juice
- Crush peanuts in a plastic bag with the bottom of a mug or pot
- Substitute shrimp with chicken and/or tofu
- Fresh sprouts are a great addition
